Tellicherry is a small town on the Arabian Sea in the Indian state of Kerala. Here, on plantations cultivated at high altitude among tropical forests and monsoons, the Piper nigrum which the Venetian merchants sought with all their gold.
Tellicherry pepper stands out for a specific characteristic: the berries are left to ripen longer on the plant, until they reach a larger-than-normal size. The result is a complex aroma—notes of citrus, wood, and a rounded spiciness that doesn't burn, but opens up.
It's not the pepper from the grinder on the table. It's an ingredient to cook with consciously.
