Wild Black Cod (Sablefish) – Wild Salmon

Black Cod, also known as sablefish (Anoplopoma fimbria), comes from the cold waters of Alaska and north-western Canada. Despite its name it is not a cod: it is considered the king of white fish, with snow-white, firm, delicate flesh, naturally rich in Omega 3.

Available raw, blast-chilled immediately after catching, or cold-smoked by Wild Salmon in its own smokehouse in Turin with maple and beech wood, with no flavourings or liquid smoke.

In the kitchen: the Japanese classic is Black Cod marinated in miso; Mediterranean-style it is excellent roasted with aromatic herbs and oven-baked potatoes. Smoked, it is a rarity to be enjoyed in thin slices.
