Wild King Salmon, Raw – Wild Salmon

King, or Chinook (Oncorhynchus tshawytscha), is the largest of the wild Pacific salmon: it can exceed 30 kg. It runs up rivers in different seasons (spring, summer and fall runs) and has the flesh richest in Omega 3 among the wild species: firm, flavourful, with an intense taste.

Caught in the wild and blast-chilled immediately after catching, then vacuum-packed.

In the kitchen: excellent raw for sashimi and carpaccio, baked, pan-fried or grilled. A King fillet is a feast.
