Nidi Nostrani are made with durum wheat semolina grown in the fields of Sopraceneri, milled at the Maroggia mill and then crafted by Pastificio Simona.

Slow drying and bronze-die extrusion give the pasta a rough texture, perfect for catching and holding onto the sauce.
